Mmmm Chocolate...MMMM Beer

Chocolate cake is one of the miracles of the modern world; it's sensual, delightful and decadent. 99% of women love chocolate, and therefore chocolate cake. It's one of nature's perfect foods that is liked by most people, has many benificial effects and is relatively cheap!

So imagine a luscious chocolate cake that has the subtle flavor of Guinness embedded in it - it's just as decadent as regular chocolate cake, but has a subtle bitterness that compliments the overall flavor. It really is a luxury that you can afford - you simply have to try it!

And before you start worrying, all the alcohol will burn off during cooking and therefore it's safe to eat the cake and drive!

Ingredients

  • 1/2 cup butter
  • 1/2 cup cocoa powder
  • 2 cups sugar or castor sugar, (castor sugar is very fine sugar)
  • 3 cups sour cream, full fat
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 teaspoons baking soda
  • 2 1/2 cups flour, all purpose
  • handfull almonds (optional), finely chopped
  • 1 cup Guinness

    Frosting Ingredients

    Frosting:

    Note: you can use store bought frosting if you wish, but here's a recipe for making it yourself.

    • 8 ounces of Philadelphia Cream Cheese (you can use store-brand if you wish, but Philadelphia is the best).
    • 1 1/4 cups of powdered sugar
    • 1/2 cup heavy cream
    • (Optional) 1/8 cup of cocoa powder

    Cooking Instructions

    Cake:

    • Heat the oven to 350 degrees Fahrenheit
    • If you don’t have a non-stick 9-inch cake pan, grease a 9-inch cake pan.
    • Mix the butter and Guinness in a pan and heat slowly until the butter is melted.
    • Mix the sour cream, eggs and vanilla and add the flour and baking soda and all other ingredients.
    • Pour the sour cream mixture into the Guinness butter and stir gently – try and get it all thoroughly mixed.
    • Pour this mixture into the baking pan and bake for about 35 - 45 minutes. To check to see if the cake is cooked, get a clean fork and place it in the center of the cake – if the fork is clean when removed, then the cake is done.

    Frosting:

    • Beat the sugar and cream cheese together and make sure it is smooth.
    • Add the cream and mix slowly.
    • (optional) Add the cocoa powder and mix in.


    Frosting ideas

    • One I have seen is to leave the frosting white (you can add white chocolate cocoa powder if you want) – and then simply spread this on top of the cake – the cake then looks like a Guinness.
    • Split the cake in two; spread half of the frosting between the two cakes and the other half on top. (You can make half ‘chocolate’ covered, and half ‘white’ and still get the Guinness effect).

    Oh, this is perfect! - a real chocolate cake with Hershey's cocoa. I made one and used the cocoa powder for the frosting too. Spectacular! And now add the Guinness - Oh, baby! This will be the prefect dessert - thanks so much! I'm bookmarking this. I'm so excited! Thanks!

    Habee: lol luckily the alcohol burns off so you end up with a pretty decent chocolate cake - the Guinness bitterness compliments the chocolate wonderfully - gives it a Richness. The same goes for Guinness in most recipes - the Guinness Stew is fantastic - my daughters arrange their busy teenage schedule when they know I am making it!

    All - thanks for the comments. One thing you might want to do is to double the frosting amount, especially if you cut the cake in half. You can also increase the amount of chocolate if you want. We made this for my birthday - it was fun to make a cake from scratch again and it still remains one of the best chocolate cake recipes I have!
