Guinness Braised Beef and Cabbage

An experiment with Guinness, Cabbage and Beef
I love cooking and one of my favorite ingredients to cook with is Guinness. This weekend I was at a loss, I’d cooked my favorite Guinness Irish Stew so many times recently that I wanted a change. Looking in the fridge I found a red cabbage, and in the freezer a London Broil – so I decided to experiment.
I was pleasantly surprised how this meal came out. The meat was very tender and had a really nice texture and flavor. The cabbage had a slight bitterness to it that was actually quite pleasant. This definitely will be one recipe I will be trying again, and with all that cabbage it’s actually a pretty healthy meal too!
Ingredients
- One Red Cabbage (you can use any cabbage, but I find the flavor of the red cabbage combines perfectly with the bitterness of the Guinness).
- One small onion
- Three pounds of braising steak (or London Broil).
- Fresh Herbs (I used parsley, sage, thyme and rosemary)
- 3 cups of beef stock
- One bottle of Guinness
- Optional: half a pound of bacon
- Optional: flour to thicken.
Fresh Herbs
I never used to use fresh herbs when cooking as they were very expensive. However, recently my wife bought an Aerogarden and we've been growing our own herbs! I was surprised how easy this is to do, and for about $20 for a seed kit I get enough fresh herbs to last me all summer - I even have to store some of the herbs in the fridge as it grows pretty well!
Serving Suggestions
- You can serve this with mashed potatoes.
- Get some nice rye bread, drain of the gravy and create a nice ‘Reuben’ style sandwich.
- In a hot-dog roll with some mustard.
Cooking Instructions
- Chop the cabbage up into small pieces.
- Chop the onion into small pieces
- Place all ingredients into a crock-pot – heat on high for an hour and then reduce to low for another hour.
You can brown the beef if you want, as well as quickly frying the onion and cabbage. Also, you can add some bacon to add another nice flavor. This produces a thin gravy, so you can use flour or corn flour to thicken if you want.

Simey, this is a very unusual recipe! But when it comes to the irish and guiness, I should just go along with it! Very impressive. I have tried Irish stew, but never this way! Cheers! Literally! : )
